Notebook scoop: Italian Bistro in the works in Old Town

Corks & Cleaver Bistro of Gulfport is branching out to Old Town Bay St. Louis.

Work will begin this month on the new Corks & Cleaver Italian Bistro at 111 Main Street. Award-winning Chef David Dickensauge of Corks & Cleaver in Gulfport will be in the kitchen of the new restaurant, which is expected to open in late spring or early summer. 

Lee Parrish, representing the Parrish family who developed the Main Street building, said restaurant consultants from New Orleans are working with Dickensauge on the new project. The firm of Watters Architecture is preparing renovation drawings.

Parrish said the space, which formerly housed Old Cuevas Bistro, will undergo some improvements in the dining room and he’s adding a banquet facility that will seat 70 plus an outside dining area and beer garden to handle an additional 100 people. 

Parrish said the banquet space will have a separate entrance and the outside landscaped space will be available for wedding receptions and other events.

The main entrance off Main Street will be moved back about 20 feet to make room for outdoor seating for about 16 to 20 people.
