OK, the oyster reefs are open again. The Department of Marine Resources closed the reefs Oct. 3 due to the threat of Tropical Storm Karen.

Now open for tonging are reefs in Pass Christian, Henderson Point, Waveland and St. Stanislaus, among others. The daily tonging limit is 12 sacks.

Reefs will open to commercial dredging Oct. 14. The initial limit will be 20 sacks a day.

  1. My fave is oyster dressing. I don’t even care if you skip the turkey. You can poach a turkey wing or drumstick for stock and use that to make the dressing, bake a few sweet potatoes, plus cranberry sauce (grate some orange zest into it for a nice change) and you’re done. Well, except for the pecan pie, of course.
